When it does not, it is three edits and one of them gets missed.

Change the quantity on the line. The line total and the proposal total are worked out from the quantity and the rate, so one edit puts the whole document right and you send it again.

The acceptance is recorded against the proposal with their typed name, the time they accepted and the exact lines that were on it when they did. It is a record, not a recollection.

Yes, and you should. They are separate services with their own prices and inclusions, so a client who is supplying their own alcohol is not being sold a discounted version of the stocked package.
