Yes. Build the proposal with a line and a rate per candidate and it totals itself, so the builder sees a number he can put through his own system.

His acceptance is recorded against the proposal with his typed name and the time. Turning it into a job in your diary is a separate step you take from your side, and the job arrives unscheduled, so you put it on the date you want it on. The places on that date are counted by the date itself, never by the quote.

Take a deposit, a percentage or a fixed amount, when the date is booked. The day is committed, and the balance goes out as a payment request afterwards.

Yes. Each date carries the number of places you set, and it is enforced no matter how the bookings arrive. Once they are gone the date stops selling.
